Creamy Sweet Potato and Carrot Soup

Ingredients:

  • 1 tbsp ghee or olive oil
  • 2 sweet potatoes, diced
  • 3 carrots, chopped
  • 1 tsp grated ginger
  • 1/2 tsp cumin seeds
  • 1/4 tsp cinnamon
  • 3 cups vegetable broth
  • Salt to taste

Instructions:

  1. Heat ghee and sauté cumin, ginger, then add vegetables.
  2. Add broth, simmer until soft.
  3. Blend until creamy. Top with a swirl of coconut milk.
