Coconut Quinoa with Cucumber & Mint

Ingredients:

  • 1 cup quinoa
  • 1 cup coconut milk + 1 cup water
  • 1 cucumber, diced
  • 1 tbsp chopped mint
  • Squeeze of lime
  • Salt to taste

Instructions:

  1. Cook quinoa in coconut milk/water.
  2. Cool and mix in cucumber, mint, and lime.

Why it works: Cooling and refreshing, reduces internal heat.
